Yes we’re heading back down to Mexico for today’s International Sandwich Sunday. Specifically for the Pambazo. It is decidedly not a light sandwich given that the main ingredients chorizo mashed together with potatoes. Still, it promises to be one tasty sandwich.

I just picked up chorizo yesterday, and I have the rest. I think I'll go for a hash brown with the sausage instead of boiling. Making the egg salad with pecans today. A buddy makes his own fermented hot sauce. I like hot things and his blueberry ghost sauce turns a mashed avocado into the best schmeer ever. I got some street corn style corn chips from Aldi the other day and together... Damn! So good 🤯
