The Best Gingerbread Cookies😍 The recipe is gluten-free & dairy-free! These cookies are so yummy and full of flavor. They are soft in the centers and crisp on the edges🤩 These are a perfect treat for your Christmas celebrations🎅🏻🎄 If you aren’t coeliac/intolerant to gluten/IBS sufferer, you can of course use wheat flour in these😁

In Nordic countries we have our own way of making Gingerbread Cookies. We use dark syrup which is pretty similar to light molasses. Our dark syrup is not same as American dark corn syrup. The dark syrup is processed from sugar beets instead of corn.  Dark syrup is more sweet than light molasses, but they are pretty close in taste. So, if you don´t happen to have dark syrup, you can use light molasses in this recipe!☺️

This recipe makes about 20-25 cookies

Ingredients:
1/3 cup melted coconut oil (80 ml)
1/2 cup coconut sugar or brown sugar (120 ml)
1/4 cup molasses/dark syrup* (60 ml)
2 tablespoons gingerbread spice
1 egg
2 cups all purpose gluten-free flour mix (480 ml)
1 teaspoon baking soda

1. Put the coconut oil, sugar, molasses/dark syrup and the spices into a pot. Bring to boil. Let the mixture cool until it’s about lukewarm
2. Add the egg to the mixture and stir
3. Add the dry ingredients and mix until smooth
4. Wrap the dough in plastic wrap and refrigerate overnight
5. Roll out on a floured surface to 3 mm (1/8 inch) thickness and then cut into shapes using cookie cutters
6. Place the cookies on a baking pan lined with parchment paper
7. Bake at 200 Celsius degrees (390 in Fahrenheit) for about 7- 10 minutes. If doing big cookies, bake at 180 Celsius degrees (350 in Fahrenheit) for a little longer time


* If you have IBS, I recommend using brown sugar since it’s low-FODMAP. Serving size of two cookies is low-FODMAP☺️

Bonjour, excuse moi mais c’est quoi la mélasse je suis française et en France je vois pas à quoi cela peux 🇫🇷correspond c’est dommage. J’adore les gâteaux à la cannelle pour Noël.😊
