You can sort a table in Word. That is easy, but you can't filter a table in Word. The workaround is to paste the Excel data into Word with a Link. When you filter the Excel file, the Word table changes immediately since it is linked.

To link Excel data in Word, copy your Excel data, go to Word, right click and paste and pick either option 3 or 4. By start with Link...

Great, Thanks! Now I have to see if I can FORMAT the data in Word and it stays there when I filter :)

Can this be done more than once? Say you want to show a linked table with different filters applied to it.

Eg. Show everyone in one state, then another table with everyone in another state.

Does this work when the word/table is put in SharePoint? Can others make changes?
