BLACK BEAN QUINOA SALAD

DRESSING INGREDIENTS:
1 1/2 TBSP Apple Cider Vinegar (I use raw, with mother)
1/3 Cup Olive Oil
1 1/2 TSP Cumin
Juice from 1 Lime
1 Clove Garlic (minced)
1 TSP Salt
1/4 Cup Cilantro (chopped)

REMAINING INGREDIENTS:
3 Cups cooked quinoa
1 Can Black Beans
1 Can Corn
1 Bell pepper (chopped)
1/2 Red Onion (chopped)

DIRECTIONS:
1. Rinse 1 cup dry quinoa under cold water. Transfer to medium sized pot. Instead of cooking with water, I use veggie broth (2 cups) for added flavor. Once cooked, set aside to cool

2. Whisk together dressing ingredients in small bowl until combined well

3. In large bowl, add cooked quinoa, 1 can black beans, 1 can corn, bell pepper, and onion

4. Add dressing mixture to quinoa and veggie mixture, mix well

5. For best results, allow salad to sit in the fridge for 1 hour before serving to allow flavors to marinate
