Hmmm... I have spinach, and I have feta, and I have eggs. If it weren't 2 AM, I'd be making this now. I think it can wait til morning...

What a great combination! And yes, spinach is SO deceptive. You put in what you're sure is ridiculously too much, and three minutes later it's all vanished.

This is one of my favorite things to make for breakfast! LOL. The only thing I do differently is that I put shredded spinach in the egg, but i put about a cup of chopped asparagus in the "middle" with the fetta cheese (I only put a small amount of feta, it is pretty strong in flavor). good.

I never take the ends off spinach either. I don't see the big deal. Tastes just as good with them on. A delicious omelette.

Is all that oil/fat necessary? Couldn't you simply use a tablespoon of olive oil?

Agghhhh!!! the fork scraping on the plate! Similar to fingers nails scraping down a black board. Looks great. Trying it soon, but have no spinach.

tried it with 3 eggs salt pepper and a little oregango whisked in the eggs and added basil&tomato feta cheese and no spinach and it tasted disgusting
