Chef Fernando Saralegui shows us how to make two delicious dishes with Spanish roots. From Fernando's notes:
Tortilla Española - (potato and onion fritata) A Spanish tapa bar classic that like many Spanish recipes has been adopted as their own by Cubans.
Bacalao - Through it’s heritage Cuba has strong Basque representation (my family included) and a Basque is never far from a Cod recipe. This is a great appetizer or tapa eaten across northern Spain.
