Need to step up your cookie game? I got you.
Now don't get me wrong... I LOVE my brown-butter cookie recipe. Its my GO-TO recipe. But when I want to make something a little different and a little more special. I like to make these guys:)

Levain Bakery Style Cookies
INGREDIENTS
-1 cup *cold butter (Do not take it out to soften)
-3/4 cup light brown sugar, packed
-1/2 cup sugar
-2 eggs
-1 cup cake flour
-1 3/4 cup all purpose flour
-1 teaspoon baking powder
-1 teaspoon baking soda
-1 teaspoon coarse sea salt
-2 cups walnut halves
-1 bag semi-sweet chocolate chips (or 2 cups)
HOW TO
Start by taking your butter straight out of the fridge, cut into big cubes, and put right into a stand mixer (hand mixer and large bowl works too.) Add sugars in with the butter. Mix until just combine. Add egg. Mix until just combine. (*as noted in the video, DO NOT over-mix this dough. You will get flat, sad cookies.) Dump the rest of the ingredients right onto of the butter/sugar mixture. Pulse your blender until dough is fully combine. Form into 6oz (3/4) size dough balls. *Its recommended to refrigerate for at least 30 minutes to 2 hours* Or go ahead and bake in a 400 degree oven for 11 minutes.
*You can also make smaller cookies with this recipe! Just form into smaller balls and bake for 9 minutes.

Don’t do a cookie in the style of … here is the actual recipe. Levain chocolate chip walnut cookie

1 cup Cold Butter
1 cup Brown Sugar
1/2 cup Sugar
2 Eggs
3 cups bread flour
3/4 tsp Baking Soda
3/4 tsp Salt
2 cups Chocolate Chips
2 cups Walnuts (crush by hand should be chunky)

1. Measure 6oz on scale they should be rough shaped balls should not be smooth.
2. Chill dough in refrigerator slightly 15 minutes
3. Heat oven to 400 degrees (use convection if available)
4. Don’t over crowd pan, should be 4 - 6 on pan. Don’t use a thin baking sheet. Place on an upside down baking sheet.
5. Cook for 10 +/- 1-2 minutes (don’t over cook)
6. Leave on pan to cool
7. Repeat

Back story the owners were marathon runners and wanted a substantial cookie and they wanted to open a bakery. Hence the bread flour used instead of regular flour or corn starch as most recipes use on the internet. They wanted a slightly dense cookie that would satiate their running appetit.
The other cookies types are an off-shoot of the original recipe.

FYI! Do not over cook they should be a little un done because they will be hot and still cooking until cooled on pan.

I love THOSE LOOK AMAZING! I have a new suggestion for you to try on your chocolate chip cookie journey/journal. On top of adding brown sugar... add a little molasses AND let your cookie dough sit in the fridge for at minimum 3 days. I would say 4 days is optimal though. I only cook the amount of cookies that I am going to eat and then let the rest sit in the fridge. I promise it will change your life :) I also cook them at 410!!!

Is your machine not going to break of you use butter out of the fridge. Would a processor not work better

There wonderful ok long ago mrs fields made cookies with 5 or 6 items in one amazing I think it was fields anyway I just made cookies with pecans walnuts Cho chips white chips and butterscotch chips that’s all I had in the kitchen but not big like yours and I love yours but mind are wonderful also but my husband won’t snack on them at night keeps him awake he works nights enjoyed your video him try more things she even used coconut witch I don’t but it sold now she’s seems to cook one thing and I don’t blame but they V srtill are amazing
