1/4 teaspoon kosher salt
2 ounces bacon, roughly chopped
2 ounces fatty ground pork
1/3 teaspoon ginger paste
2 teaspoons soy sauce
1 teaspoon sugar
1 teaspoon toasted sesame oil
1/2 tablespoon dry sherry
Dipping Sauce:
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 teaspoon sugar
1 teaspoon minced ginger or ginger paste

The rotating thing is to cut out the dumpling wrappers when you roll out the dough in a long strip. Roll it over the dough like a pizza cutter cutting out the rounds.
