Millet Curd Rice | Little Millet/ Samai Curd rice | Curd Rice Healthy Recipe

Ingredients:-
1/2 cup little millet/samai (foxtail and barnyard millet can be used too for this recipe)
1.5 cup water
1.5 cup fresh beaten curd (any plant based yogurt will work too)
1/4 cup carrot, grated
1/4 cup onion, optional
2 tbsp coriander leaves, chopped
1/2 tsp ginger, minced
1-2 green chilies, sliced
1/2 tsp salt

For tempering:-
1 tsp oil
1/2 tsp mustard seeds
1/2 tsp Urad daal
8-10 curry leaves
Dried red chilies

Wash the millet thoroughly and soak them for at least 5 hours for maximum benefit. Pressure cook them for 3-4 Whistle. Let it cool for a while then add carrot, onion, coriander, grated ginger, green chili, salt and beaten curd. Combine everything well. Prepare a tadka and pour over the millet curd mixture and mix. Serve with your favorite papad, achar and enjoy!
