Let me fatten you up with comfort in liquid form. Pozole Rojo is semi Debatably one of the best soups ever.
Notice anything at 0:40??

here is the recipe do you aren't wandering for it
[For soup]
4qt water
2lbs pork shoulder
1lbs baby back ribs
1/2 Onion cut into quarters
12 cloves of garlic
2 bay leaves
Salt and pepper to taste
2 cans white hominy

[FOR RED SAUCE]
5 guajillo chiles
5 ancho chiles
garlic from the soup
1/2 large white onion
1tsp dried Mexican oregano
2Tbsp oil (to cook it)
1/2msg
salt and pepper to taste.

1.simmer pork shoulder, ribs, garlic, onion, and bay leaves for two hours. (skim foam)
2. remove meat from soup and shred then add back to pot (trim fat as needed)
3. soak dried ancho and guajilla peppers 30 minutes before soup is done simmering (until soft)
4.add softened peppers to blender along with, garlic from soup, onion from soup, fresh onion, oregano, salt, pepper, msg, and 1/4c broth and blend.
5. Cook sauce with hot oil in pan until thickened. (20 minutes on low after boil)
6.add red sauce to soup and cook for 5 minutes. add hominy and cook until heated through.
7. serve your huge back self (like me) a big ole bowl.

I was diagnosed as having dementia and once I accepted my diagnosis, I am currently writing down my recipes to give to my granddaughter and great-granddaughter because, as with most of us granma's, we have all the ingredients in our heads. The reason for doing it now is that at times, I have trouble remembering the ingredients. 😢 I want to do the same thing with my crochet and crossstitch patterns. This young man was raised by extradionary women around him.❤

I love posole! My favorite mexican comfort food! I am a korean who loves posole! My kitchen manager at work when i was an elementary school teacher would make a huge pot of posole for christmas and feed the teachers with her delicious posole! Add fresh onions, cabbage, and lime! To die for!!! Oh i do miss her posole!

Man, I remember the first time I had pozole and it was a life changing experience, cause over here in Poland when you hear "Mexican food" you think tortilla chips and microwave wraps with "Mexican sauce", but I want to an actual Mexican restaurant run by a Mexican chef, took my first spoon of that pozole and my life was forever changed! It was one of the things that pushed me to start cooking and 6 years later I have my own food truck and make food for a living.

I had a neighbor years ago; she spoke very little English and I very little Spanish, and we’d greet each other off and on in the three years we lived next to each other. Her family hosted a lot of parties and always had a ton of food cooking. We didn’t have a fence in the backyard so I’d be piddling around the house when I’d hear a tapping on my back door, my lovely neighbor with one of her daughters holding bowls of this wonderful soup, I suck at making it, so her gifting this dish really blessed us.

Had a Muslim friend of mine when I was younger come over when we were teens. We got ridiculously drunk one night and my mom made some pozole rojo. We went to town, like 3 bowls each. When that last bowl came around, the realization hit me. “DUDE STOP EATING THAT’S PORK!!!” …….“I love this so much I don’t even care.” The dude converted out not much longer after that. As a Mexican that eats this rather often, I wish more people knew of this heavenly soup.

I went to my cousin’s house who’s have Asian half Mexican and when his mom served me some pozole I was blown away by how good it was
She also made ceviche with tostadas and GODDAMN I never knew I loved Mexican food until that day

Dude-I grew up on this in Northern New Mexico and my folks made sure we ate right. Even though I’m a gringa, posole, fresh beans and torts were staple foods in our lives. Nothing better in this world. Thank you!

Menudo gets all the love but I prefer pozole.
"U look a little thin..." got me right in the feels.
That's how my grandmother let me know she wants me to be ok and she understood what I was going thru. RIP. RIP, your grandma too.
