Hi Tom. I've watched your videos for well over five years and I love them. I even traveled from New Mexico to meet you. A couple things I never saw you try is a shoulder clod on the pellet grill. The other interesting piece of meat would be mollejas or sweet bread. It is getting noticed here in NM due to the high price of meat. Just a thought. Being kind to one another....Thanks, Fred
