Baby Back Ribs on the Santa Maria Grill

Ribs are some of my favorite things to eat and cooking them over the fire, takes them to a whole new level. Everyone know that smoked ribs are delicious but absolutely nothing beats a rack of ribs kissed by fire.

These racks from Costco come with the membranes already removed but if they didn’t, I would’ve left them in tact. 90% of the cook happens on the bone side and the membrane and bones protect the meat from drying out. 10% of the cook is searing off the meat side.

These were absolutely delicious and in about 2 weeks, my jalapeño ranch seasoning will be available.
