Great are the Roughriders,
And the Kipu‘upu‘u rain.
Now I behold for myself,
The foremost cowboys;
Who drink the crystal waters.

Few sun-seeking visitors to Hawaii think of the islands as a land of roughriding cowboys-but indeed they are. The first cowboys in
Hawaii were Mexican immigrants who accompanied early cattle shipments, and, being erroneously considered Spanish were called españoles, which soon became paniolos. Today, paniolos tend fine herds of Herefords on the pastures that spill across Hawaii’s rolling volcanic slopes.
