I recently saw a video about how Kaido believes himself to be joyboy (this is just speculation). If this is true, jumping in water would also kill kaido if he transformed or not. If kaido died using falling, he believes joyboy would awaken without drowning

1. If a devil fruit user is to be sinked he or she should be covered by water or submerged by sea water
2. Kido was famous and he dint want to die in the way no one will know so he try to kill himself through fights but he was too strong until lufyy shows up

Kaido wants a good death he wants to die but doesn't just want to jump into water

Even if the water was deep enough in the first one devil fruit users mostly likely would float after death as it is said that the devil that resides in a devil fruit transfers to your soul when eaten and when you die it transfers to a fruit so the sea would most likely not let recognize you as a devil fruit user and you would end up floating

The whole steel cutting thing with chains the seal in chains are often made specifically to handle pulling, so they get cut across the side easily with the fruit stills actually meant for cutting and resisting therefore, it would probably be more durable than chains
