Things you missed:
1. branch mine, or, better know as strip mining (mining in straight or grid pattern lines, you do it at diamond level, pretty effective)
2. elytra (a good way to escape)
3. rockets (you need a lot of rockets for traveling long distance quickly, make sure to stock them up)
4. trade with villagers, unlock enchanted books (mending, unbreaking 3 etc)
5. Make an exp farm (dont drop the mobs to their death, you need to kill them yourself for exp)
6. light up your places (light level below 7 is dangerous)
7. In the nether, use cobblestones to prevent ghasts from destroying your buildings (or cover buildings with cobblestones since it's the cheapest)
8. Bring ender pearls (just in case elytra runs out, you can throw the pearl into water to land safely)

Things I want to debunk:
1: using an ice path will end up being a waste of time and much slower than moving the items by hand, due to having to place and break the entire path
2: you really don't need backup gear if you took that little bit of time to get mending
3: you don't need a fast horse if you have elytra, and before you have them, there's no point in that minor speed increase
4: brown mushrooms are effectively indistinguishable from mooshrooms, both give access to mushrooms (only their stews are different)
5: fishing was nerfed, and everything of actual value (enchanted books) that you can get from it you can get faster and easier from villagers
6: You do not want to fish for saddles, you will need between 1 & 5 depending on how many horses you want which can be found in basically any loot chest in every dimension
7: you don't need hero of the village, villager trades can be forced down to 1 emerald in 1.14 without having to fight (though I heard it's being nerfed in 1.15/16)
