Regarding #1, I think it really depends on the client, most clients don't care how you do it, as long as you get it done, and as long as it's reliable

How about Create a Child Theme of storefront & customize it with CSS, Hooks and Templates. Would that be looked down upon by clients?

The ultimate portfolio power move is to take the company's website you want to work for and make your own version of it into your portfolio. Be sure to cut out every garbage library they use so your site gets a higher lighthouse score and bring that up a lot. Have the site's blog contain posts where you go through individual commits on the company's GitHub account and call out their current developers in lengthy detail. Finally, make a pull request that replaces the existing site with your portfolio site, and also be sure to list yourself as the CEO in the new site.

On second thought, probably just follow the advice given in this video.

So your advice is, use wordpress but do everything yourself. Kind off defeats the purpose of wordpress no?
