How we changed the recipe:
1/3 cup Cottage cheese
1 egg
3 tablespoons Cocoa Powder
2 tablespoons ChocZero Maple Syrup replacement
2 tablespoons ChocZero Baking Chips
1/4 teaspoon (id double it) Instant espresso powder
90 seconds in the microwave
Peanut Butter variation-
1/3 cup cottage cheese
1 egg
3 tablespoons cocoa powder
2 tablespoons of swerve
2 tablespoons peanut butter
2 tablespoons keto white chocolate chips
90 seconds in the microwave

I Always add a 1/4 to 1/2 tsp (teaspoon) of Vanilla AND a Pinch of Salt to Every Desert I make/bake. It just wakes up the ingredients! I like the part about keeping some Blended Cottage Cottage Cheese as well! My sister & I Luv watching y'all!

I literally ran in the kitchen and whipped up two of these in 8 minutes. I don’t think it mattered the cottage cheese wasn’t blended. My husband had no idea there was even cottage cheese in it! Next time I will add a little salt and vanilla. Thank you ladies!

Slightly off topic, but here is a "brain hack" that has started to work for me 2 years into my Ketovore journey.When I get food noise but don't want to eat, I go to the kitchen and cook something that takes 15-20 min.For some reason, after that I don't feel like eating !!.maybe going nose-blind.Anyway this seems to work even though I know I am passifying myself...it works.I eat less, and have ready made stuff when the food window is open.just sayin...and Thanks for being ..both of you!

This is very much like a flourless chocolate cake. And even though the cottage cheese isn’t blended, it obviously works, just doesn’t look particularly appealing. I would add some chopped pecans or walnuts. Keto butterscotch chips could be nice too. I usually top my keto chocolate cakes with either raspberries or strawberries and whipped cream.

Made the peanut butter one as a blondie just now but with almond butter powdered vegan egg and egg whites white chocolate. It was divine----you could tell it was a lava cake. Unbelievably easy and delicious! I like powdered egg since I can vary the liquid in it and also feel safer tasting before baking to see if I got the right amount of sweetener. Thank you for posting!

Just use ricotta, or blend a whole container of cottage cheese so it’s smooth.

I'm beginning to reaaaallly dislike almond flour for sweet baking.😖This sounds great! I, too, learned early on how versatile blended c. cheese is, and always keep a container in the fridge. Handy!!
