OLD SCHOOL BUTTERSCOTCH AND CHOCOLATE BREAD PUDDING

This is how i enjoy using up brioche bread
Its my favorite bread to use when i make bread pudding

RECIPE:
FOR CUSTARD
2 quarts diced brioche bread
6 eggs, beaten
4cups milk
1 cup white sugar
1 teaspoon ground cinnamon(optional)
1 teaspoon vanilla extract
Directions
Preheat oven to 350 degrees F (175 degrees C).
Slice or dice bread into small pieces into an 8 inch square baking pan. . If desired, sprinkle with raisins.
In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.

you can also heat the milk and sugar and then add the eggs to it )Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

RECIPE FOR VANILLA SAUCE
4 egg yolks
1 cup heavy cream
1 tsp vanilla
1/3 cup granulated sugar

heat milk,vanilla and sugar in small pot until boiling
add 1/2 hot cream to eggs yolks in bowl
mix together and add back to small pot
simmer for 1 minute and cool
serve with pudding

Back in 1999, I did an internship in the kitchen of an assisted living facility. The cook there, made a bread pudding utilizing all of the few day old breads, pastries and donuts. Everybody raved about that bread pudding. I cant eat gluten so I didnt taste any of it but it looked and smelled heavenly. 😋😋😋😋

Hello Jeffrey the 🍞 bread pudding looks delicious my grandmother's made bread puddings and my mother said my gr4andmother her mother made it a lot for their Sunday dinners it was war time in the 30s and 40s.Thanks for showing. Back then bread puddings 🍚 rice puddings and butter rolls is what you got for dinners Christmas Thanksgiving and Easter was special desserts.

I love a good bread pudding. I prefer raisins but that's easy to substitute with the chocolate chips.

Good evening Chef Jeffrey! I can't wait to make this delicious bread pudding. Haven't had it in Sooo long!!! Thanks to your wonderful instructions now I know the secret in keeping it moist. Cover with aluminum foil. Put on cookie sheet and add some water to the cookie sheet. I never would of thought to do that. Bless you for sharing with us all your secret tips.
