Good question. The video seems to skip over that part. Either they scooped up way too much and did it again (all part of the learning process) or there's a device in the scoop which skims off the excess. The sample does seem to move when he says, "..will close the scoop." Then again it's timelapse footage, so the sample may have settled on its own. Finding technical specifications for the rover online seems to be an exercise in futility.
