Today: Cajun Chicken Pasta Skillet, Hamburger & Rice Skillet, Grilled Chicken Teriyaki, Mushroom Hamburger Scalloped Potatoes
CAJUN CHICKEN PASTA SKILLET
INGREDIENTS
1/2 pound linguine pasta
4 boneless, skinless chicken breast halves, sliced into thin strips
1 Tablespoon and 1 teaspoon Cajun seasoning
1/4 cup of butter
2 green peppers, chopped
2 green onions, minced
3 cups heavy cream
1/2 teaspoon basil
1/2 teaspoon lemon pepper
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 tsp. ground black pepper
1/4 cup grated or shredded Parmesan cheese
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook according to package directions or al dente. Drain.
Place chicken and Cajun seasoning in a bowl and toss to coat.
In a large skillet over medium heat, sauté chicken in butter until no longer pink and juices run clear (about 5-7 min).
Add green peppers and green onions (Optional: add red pepper and mushrooms)
Cook for 2-3 minutes.
Reduce heat and stir in heavy cream
Season the sauce with listed spices and heat Through.
Toss pasta with sauce and sprinkle with Parmesan cheese.
HAMBURGER & RICE SKILLET
INGREDIENTS
1+1/2 lb. ground beef
1lb can tomatoes
1 onion, chopped
1 Tbsp. butter, melted
1 c. uncooked rice
1 Tbsp. seasoned salt
1-1/2 c. water
DIRECTIONS
Brown beef and onion in butter; stir in rice. Add tomatoes and salt. Cover and simmer for 45-60 minutes or until rice is tender; add more water if needed.
INGREDIENTS
Chicken Breast
1/3 cup soy sauce
1/3 cup water
1/3 cup dark brown sugar
3 tbsp white cooking wine
1 tbsp honey
2 cloves garlic peeled and minced
DIRECTIONS
Mix all ingredients, add chicken and marinate for 2-12 hours.
MUSHROOM HAMBURGER SCALLOPED POTATOES
INGREDIENTS
1LB ground beef
1 can cream of mushroom soup
2/3 c. evaporated milk
1/2 c. finely chopped onion
4 c. sliced potatoes, cooked almost done
Grated American cheese to taste
DIRECTIONS
Cook ground beef
Mix soup, milk, 1/2 c. cheese, onion and a little salt and pepper.
Add cooked potatoes and cooked ground beef.
Mix everything together and put into a greased baking dish. Put 1/4 с. cheese or more on top and bake at 350° degrees until done (approx. 30-40 minutes)
