#Wazwan is a multi-course meal in Kashmiri cuisine, the preparation of which is considered an art and a point of pride in Kashmiri culture and identity. It's commonly found at weddings, functions and family gatherings.
From L to R in the cups, we have:
1. Rista-meatballs in fiery red gravy
2. Saag- cooked spinach
3. Marchwangan korma- a very spicy lamb dish
4. Tomato paneer
5. Gushtaba- a velvety textured meatball in white yogurt gravy
On the bed of rice, from top to bottom, we have:
1. Daniwal korma- a mutton curry with coriander and methi (my favourite)
2. Seekh kabab
3. Tabak maaz- ribs of lamb simmered in yogurt till tender, then fried
Established in 1918, Ahdoo's was the first restaurant in the Kashmir valley. Known as the connoisseur of the Kashmiri Wazwan. Till date it serves to be the most authentic Kashmiri Wazwan in the Valley. The speciality restaurant also serves Indian, Mughlai and Chinese Cuisine.
Hayat Bhat, the 45-year-old owner and managing director of Ahdoo’s, says that his great-grandfather, Abdul Ahad, worked in the accounts department of Maharaja Hari Singh, who sent Ahad’s son and Bhat’s grandfather, Mohammad Sultan, to study at the East India Company’s confectionery in Calcutta (now Kolkata). The only confectionery in Kashmir at that time was Nedou’s Hotel, set up by Michael Adam Nedou in 1988. When Sultan returned, he and his cousin set up a bakery, Ahadoo and Sons, named after his father, Ahad. The first Kashmiri bakery in Srinagar, it found favour with the locals and the tourists and branched out into a 60-seater restaurant in 1921. In the 1980s, Bhat’s father extended the brand to include lodging. Today, Ahdoo’s boasts of 120 seats.
Haji Mohammad Ibrahim Mugloo, the man who bought "Wazwan" to common man started Mughal Darbar in 1984 with a simple restaurant which grew into a taste center of Kashmir, now fondly called " The taste of Nation". Being a perfectionist and great lover of Wazwan himself he has always strived to make it even better. Now his sons too work even harder to implement the modern techniques of hygiene and nourishment.
What is worthy needs no praise, it may be out of course to be self praising and that's why we don't boast but invite the lovers of cuisine who have never visited Mughal Darbar to visit here and give us the honor of being their host and serve what we are best at !
If you are searching for a fine dining restaurant in Srinagar, it has to be Shamyana restaurant. Secondly, the food service is amazing here, serving some excellent dishes. Everything on the menu not just sounds but tastes delicious also. Some of the worthy specials to try out are Trout fry, Reshmi Kebab, Galouti kebabs, Kashmiri Kebab, etc. There is ample seating place as the area is so huge. The prices might be slightly on the higher side, but the Kashmiri Khana you will find here will not find anywhere in Srinagar. The cost for the two is Rs. 800.
Located amongst the majestic maple trees, The Chinar is an outdoor restaurant situated at the Lalit Grand. Furthermore, the service is so excellent, offering varieties of delicacies to the people. People can take the buffet service also for lunches and dinners. Guests can book fine wine along with their dining experience. Being a 5-star restaurant, dining here is amazing if you are a true foodie. Malai Tikka and Chicken cooked with Apricots are incredible dishes found here. The cost for two is Rs. 1,500, but the food is worth it here.
