Technically still need 2 buckets. The only difference is that you use one bucket filled twice.

You can also get infinite water from no water source at all by placing down a cauldron, collecting rain water than filling up water bottles with that new water source

There is also a method that involves using kelp

By placing water in one 4×4 square and then placing kelp in the opposite corner will turn the rest of the three squares into source blocks

Another trick is to put a cauldron down and have a piston push it under a waterlogged block and have it push our again, the waterlogged block will auto fill the cauldron and thus infinite water from one bucket. Its not efficient by any means but i like to use this in my brewing rooms for the aesthetics

You can actually also just bonemeal flowing water and the spawned sea weed will make it a full source
Also you can just place the sea weed or kelp:)

In older versions of Minecraft you were able to make an infinite water source just from one bucket by placing, picking up and placing it again really fast. Fun times
