Creamy Vegan Pistachio Ice Cream Recipe

We were messaged and asked to make more vegan ice cream recipes so here's our next one "Vegan Pistachio Ice Cream".

We are once again using Elmlea plant based double cream along with some oat cream and then sugar and pistachios. You will need a small food blender for this recipe OR you can buy pistachio paste if you wish.

Also a note about adding liquid to pistachio paste (or any nut paste), you absolutely CAN add water or simple syrup or even oils to your nut plaste as it's blending, you will just need to keep adding it slowly until the paste comes together and becomes super smooth.

What you'll need here:

250 Elmlea plant cream
250 Oat cream
180g Sugar
1/4 tsp Almond extract
80g Pistachio paste homemade
200g Water
20g Chopped pistachios to fold in

We can't recommend the elmlea plant based cream enough but if you can't get it, let us know what you used and how it works. I've not heard great things about the Silk plant based cream but again....I've never tried it (can't get it here).

FYI - country crock makes a plant based creamer in the USA. Not sure how it tastes, but ingredients are similar to the one you list - it’s got lentil protein as the main ingredient. Worth a shot, anyway!

Whats the benefit of making the pistachios into a paste first instead of just heating it with the base mix and blending it together?

Made a milk based pistachio recipe with mixed results. Pistachios weren't blending down into a powder. Tasted great at the end but I can improve on it. One thing I want to do is learn how to remove the purple skin to have a really bright green nut color.
