The one time I had Wahoo was at a fillet station at the dock after a chartered trip. Was waiting on our amberjack and barracuda, and was just watching the guys work. We got to talking about some of their favorites, and they had just started trimming a wahoo. They cut me a small sliver off of the spine section that they usually take home and smoke for themselves. Best sashimi I've ever had so far.
