I just re-watched this episode last night! Each time I watch I think to myself 'those employees should just walk' but I know they felt a real loyalty to each other and to the restaurant because of all the great memories. I hope they are all doing well (except Darryl and Ellen who were like the Robert and Ari of New Orleans). I'd love to know what happened to Candace. That server was a star! Recommending the Bread Pudding to Ramsay was a stroke of genius on her part knowing it would redeem the cooks.

I’m from New Orleans and used to be a server/bartender. This happened a LOT after Hurricane Katrina and I worked at a restaurant just like this (that didn’t last long). Northerners came in, bought businesses in a city still recovering from a natural disaster, and had no concept of Southern hospitality or how our food was supposed to be prepared. They just slapped “New Orleans”, “Cajun”, or “Creole” in front of a bunch of random dishes or they took weird liberties with classic dishes and expected locals to fall for it.

I stopped eating out this New Year because of this series that I had never seen before until a couple months ago.. I've been hooked since. Thank you again for opening our eyes for the little respect folks have in general while we spend our money.

Why are so many of these cooks and staff so loyal to such awful mangers/owners? I'd have taken the invitation to leave especially after my pay was cut and hours extended.
