Lebanon PA, 3.29.2021: PA Dutch Rice Pudding
Ingredients:
• 2 cups milk
• 1/3-1/2 cup rice (less for creamier rice)
• 1 egg
• 1 teaspoon vanilla
• ¼ cup brown sugar
• ¼ teaspoon salt
• ¼ teaspoon cinnamon
• 1/3 cup raisins, optional
• 2 tablespoons butter or margarine, optional
Directions:
In a baking dish or saucepan, place milk, rice beaten egg, vanilla, brown sugar, salt, cinnamon, and if desired, raisins and/or butter.
Bake at 325 degrees for 60 minutes. Stir once or twice. Turn off heat. Allow to continue baking in existing heat for another 15 minutes.
Or, cook on stovetop for 30 minutes just under a boil to keep the milk from curdling. Cover, and let stand in its own heat for another 15 minutes.
Serve warm or cold. Try with whipped cream and a sprinkle of cinnamon. Enjoy.
