Welcome back to season 2 of September Pies where we make a new pie every day in September! Today I am teaching you my go-to flaky pie crust made with Lard! This easy Lard Pie crust is the kind our great grandma's made for a reason!
Recipe:
Megan's Lard Pie Crust (Makes 2 crusts)
---------------------------------------------------
Ingredients
2.5 cups all-purpose flour
1.5 teaspoons salt
1 cup chilled lard(205 grams)
1/3 - 1/2 Cup ice water, or as needed

Directions
Blend flour and salt together in food processor with a few quick pulses.

Cut cold lard with a knife into cubes and then add to the flour mixture. Pulse 5-6 times until mixture resemble coarse sand. Stir with fork to move the mixture up from the bottom and sides.

Sprinkle in water, starting with 1/3 cup, and pulse another 5-6 times in second long bursts until all flour is moistened and dough almost cleans the sides of the bowl.

Dump the dough into a bowl and bring it all together with your hands. Adding in the rest of the water if it seems too dry.

Divide the dough in half and shape flattened rounds. Wrap in plastic and refrigerate for at least 1 hour.

Proceed with recipe as instructed.

Ever since I saw your recipe for the lard pie crust in 2022, I decided to make it and use it for all my pies. Thank you for sharing.

Yea! I am so glad this is back. I LOVED it 2 years ago and made several of the pies. The Tomato PIe is amazing and was new to me. Also loved the smores chocolate tart. Thank you for posting.

Megan, Thank you for explaining the difference between lard and shortening. I've always thought they were one and the same. Looking forward to tomorrow's pie:)

I am so excited that Sept pies are back. We still make some of your previous pies. We have actually started hosting church fellowships and for our first one I made two huge tins of cottage pie and it was a hit.

So excited to try this. Can I substitute Beef Tallow for the Lard? I just recently rendered my own Organic Grassfed beef tallow. It’s so easy!!

I was wondering: are the ivory knives hanging on your wall Nancy Silverton made in knives?

This makes pie crust look easy! But also, wish you would have given a little more info on lard... like, is it one for one with butter? so a cup of butter a cup of lard? Also, where does one buy lard?

Can't wait to switch to the next video with the first pie!

Have you seen Erin McDowells Book on Pie? She has a youtube channel too, between you and her, I might finally be able to figure out pies! 🥧❤

My mother always used lard for her pastry. When did we all get persuaded that 'alternatives' were healthier??
