If you have blackcurrant bushes in your garden, chances are that you have a lot of blackcurrants every year. Use some to create a delicious homemade cordial.

Ingredients

1.5 kg (3½ lb) blackcurrants
750 g (27 oz) plain white sugar
3 lemons

Instructions

Put 750 ml (26 fl oz) of water in a pan. Add in the sugar and turn on the heat.
Grate the rind from the lemons, then squeeze the juice.
Once the sugar has dissolved in the water, add in the lemon rind and juice and bring to the boil.
Once it starts to boil, add in the blackcurrants. Mash a little with a potato masher and bring back to the boil.
Simmer the mixture for no more than 5 minutes,.
Pass the mixture through a fine sieve or a piece of muslin. Pour the liquid into clean and sterile bottles, leaving 1 cm (½”) gap at the top of the bottle. Seal with sterile stoppers.

Titli's Tips
Dilute with water, fizzy water, or elderflower pressée. Add in some crushed ice for a taste of summer.

@OriMedian The shrivelled "currants" are dried grapes. These are blackcurrants - quite popular in fruit gardens in the UK

@wathepoint If you peel a lemon (or any citrus fruit) you get the outer coloured waxy layer (the zest) and the inner soft white layer (the pith). The two layers together are called the peel or rind.

@TitliNihaan They're no longer federally banned. Many states still ban them; however, there are several that do not. :)

@lotsabots It's a cordial. You dilute it with water to make a drink. I usually put about 1" in the bottom of a tall glass and top up with sparkling water.

@TitliNihaan Can you make it into jelly if you let it simmer for a bit longer?

Looks like fun!
I am a little confused, though. Is it a juice or will it be alcoholic or . . . what is it?

@MrAnonie It probably would, but start with less sugar and adjust accordingly

In this sense it's a concentrated juice that you dilute with water to make a refreshing non-alcoholic drink.

@icallgreens The sugar content is probably too high for fermentation
