I love Gennaro and he is absolutely right about using the bits and bobs in your cupboards, especially in a time like this. People that love food always have basics like onions, garlic, carrots, celery, potatoes kicking about. I'm married to a Spaniard so there is always panceta, chorizo, chickpeas, beans, lentils and rice. Not buying produce regularly and using what's in the house makes us better cooks. It's basically old style Mediterranean cooking. Run out of pasta - make some. Make pizza, it's easy (Gennaro shows you how). Nothing is wasted in Spain and Italy where even stale bread is the basis of a fantastic soup. Recipes like this don't have to be perfect. If you don't have an ingredient chuck something else in. You can see that this soup will be absolutely delicious. Classic Italian dish.
