I have an Advanced Elements Convertible and an Itiwit X500 (single seater). I almost exlusively use the X500 now. It has a similar speed in the water, is a tad bit more maneuverable and is far easier to setup and pack down. It also doesn't need care after packing it down. I wipe it clean and dry with a sponge and towels and pack it away. The AE Convertible needed to put to dry after each trip, so you had twice the amount of packing and unpacking per trip plus the AE needed longer to set up and pack away.
Meanwhile I have figured out on how to pack the X500 for multi day trips. Whilst it can store a bit less than the AE Convertible, it is more than sufficient for 3-4 day trips if you pack a bit smartly.
For me, the X500 is the perfect inflatable in terms of price and capabilities.

I also have an Intex Challenger K2, which I used for quite some time at the beginning. Unfortunately, a friend of mine overinflated it and it burst at some hard to reach places.

DONT Put intex kayaks in "Best inflatable" . These floating Coffins are Beach toys. If someone want to have a good first on water experience it is probably the worst tool to make a begginner happy.
