The main reason that I use WinRAR is that my archives are split into smaller sizes and if I need to extract a file, I can open just one split winrar file and when I navigate to the file I need to recover, if it is not on that split, it will tell me which split it is on. I can then simply load just that split part and recover the file.
If I was using seven zip, I would need to dump the entire volume of split archives into one directory and then open them that way.

I use 7zip on windows and whatever comes in the Linux distro I'm using at the moment.

7zip is just better to use, it supports 7z and other formats

one thing I really hate about 7zip and winrar is that they both have old outdated UIs
7zip and WinRAR still have traces of windows xp and I'm pretty sure neither have had a meaningful UI update in decades

Not sure if you can compare 7z and Rar formats. They are different technologies, with different advantages. Not sure about the details, but Rar archives can have redundancy for example. Overall, Rar is not that bad if you ignore the fact that is is not free.
