Back in the 1970's, there was a house in Boulder, CO that became a restaurant. It served only 8 people a night and had only 2 choices on a fixed menu. Even the wine was already chosen. Reservations were placed months in advance and we dressed up to go. It was a real treat as it was SO EXPENSIVE! The chef treated us like his guests and not as customers. Very memorable!

Today marks 13 years since my father died by suicide… and what luck that I should see your video, Gaz. My Dad was a chef, from Wales. I’ve ordered one of your beautiful knives and engraved it with “For you, Dad. Xo”. He taught me how to cook just as yours did. Yes, you should absolutely open a garden restaurant!! Why not just start small, serving from your garden at your house for your community, and the build up from there? Have you heard of "The Lost Kitchen" in Freedom, Maine in the US? She began by serving in her little apartment to family, friends, and the community, she called it "The Supper Club", and then expanded by purchasing an old mill and converting it into a restaurant. Now she has customers from all over the world submitting postcards for reservations from which she randomly pulls postcards to make reservations. She sources all her ingredients from local farmers and fishermen.

Hi Gaz! I've been vegan for 9 years, but I've been feeling a bit uninspired in the kitchen lately. Your videos have been a real lifesaver, helping me get back into the swing of things. I'd love to see a video where you share your weekly shopping list—whether it's from the garden or the shops (or both, haha). I'm Italian and I love food from all around the world. From fancy to street food, I swear I love it all. Despite having tried so many dishes belonging to many cultures, to me there's NOTHING like fried zucchini flowers - on the shore in Liguria... It triggers lovely memories. Stuffed are dreamy, but you can also slice them open and simply dip them in the batter; they'll become crispy and delicious.

Let me know when you get your restaurant and are hiring. Love all your videos. I've been a gardener for 40 years, vegetarian for 15 and vegan for 3 years. I own my own restaurant now. Would love to have a fully plant based vegan restaurant. Keep doing what you're doing. Love all of it!!
