One Pot Vegan Lasagne - with The Happy Pear

We had such a fantastic time when The Happy Pear came to BOSH! HQ and cooked up some incredibly delicious recipes from their brand new book, Recipes For Happiness. Their new book is so versatile, including amazing recipes for quick easy meals, hearty dishes, plant-based alternatives to family favourites and some fantastic sweet treats.

This is a delicious one pot lasagne that doesn’t even need to go into the oven! We cook the lasagne by soaking the sheets in boiling water while making the tomato sauce, then top everything off with a super-tasty cashew cheese. We think this is epic, super-original and a real breakthrough! Well worth making.

Perfect timing guys as I just went and bought the ingredients for an eggplant lasagna today. I grabbed some lasagne noodles and zucchini to make one with those too. I got on YouTube to look up a Vegan ricotta recipe and here you are on Bosh!! It is great to see you four collaborating and sharing some great recipes! Keep them coming :). You know a recipe is good when I am turning the oven on in this Texas heat haha. Great job!

Nice, but for a vegan dish meat gets mentioned a lot :p BTW I prefer this kind of recipes when you actually say what goes in, it sticks better in my head than when you just write the ingredients and go through the recipe very quickly.

The only vegetables I find disgusting are courgettes, mushrooms and baby corn... I'm just the worst vegan!
