Melissa Clark is the best. She needs more videos, longer videos. When she was one of the only videographers for the NY Times I watched every one. Now I skip most of them -- except for hers!

Love Melissa Clark. She’s truly a flaming redhead. Spectacular cook as well. Why no shrooms for the Steak Diane? Pretty traditional isn’t it? Also adds umami which she supplemented with fish sauce.

yall can clearly afford to hire someone to do proper closed captions yet continue to ignore requests for them on every single video. it's getting tiring. accessibility isn't optional and excluding disabled people by virtue of not caring to add CCs isn't a morally neutral act

Love Melissa's attitude and her recipes, but I'm pretty sure that combining butter and oil doesn't actually increase the smoke point of the cooking fat. There was a video talking about this saying that since there is just less butter in general, there's less to burn/smoke, but that there are still those milk solids in the butter so they will still burn. I totally still do butter+oil too, but that's just food for thought.
