Because when the revolt happened in the rest of the place, the British suppressed it but something different happened in Meerut
. That, on May 10, all the soldiers marched towards Delhi and from there the revolt spread all over the country.

Revolt is considered to be started in Meerut because the group of 10 soldiers were able to defeat their superiors & released the 85 imprisoned soldiers

Revolt of 1857 is supposed to be started in Meerut because the revolt took place in Meerut in a big way . The sepoys of Meerut were agitated and broke out in revolt on 10 May, 1857. The rebel sepoys of Meerut broke the prisons, released the prisoners and together marched to Delhi. On 11 May they acclaimed the then Mughal Emperor, Bahadur Shah Zafar( Bahadur Shah II), the 'Emperor of India'.

Maybe because Meerut cantonment was one of the largest cantonment in British India both in land and population and it was immediately backed by nearby rulers like Bahadur Shah zafar of Delhi, queen of Jhasi etc.
