Chicken. The prefered protein of the majority. This style of cooking , chettinad chicken in a thick paste, is simply scrumptious . One never gets tired of eating this . It is that yummy with any choice of carbo or breads .

Recipe : -
Seasoning :-
Oil - 1/4 cup
Cinnamon 2 inch stick - 2
Cardamom - 2
Cloves - 2
Dried Chilli - 5 small pieces
Fennel seeds - 1 tsp
Chicken - 500 gms ( Cleaned and cut )
Small onions - 6 chopped
Tomato - 1 chopped
Turmeric powder - 1 tsp
Hot water - 1 cup
Curry leaves
Salt to taste

Golden Trio :-
Ginger paste - 1/2 tbsp (1 inch Ginger )
Garlic paste - 1 tbsp ( 4 pods of Garlic )
Onion Paste - 1 tbsp ( 1/2 Big onion )

Dry Spice :-
Cut Dried chilli - 1 tbsp
Cumin seeds - 1 tbsp
Fennel seeds - 1/2 tbsp
Pepper - 1/2 tbsp
Curry leaves
Big Onion - 1 cut into small cubes
Garlic - 3 pods chopped

Methodology :-
Heat the pan and stirfry the dry spices until crispy.
Set it aside to cool. Once cooled , grind it to powder , and then add big onion and garlic and blend it in for a few seconds coarsely. Set it aside.
Heat the oil and add in the cinnamon, cardamom, cloves , dried chillies, fennel seeds.
Then add in the small onions , curry leaves .
Then the tomatoes, once softened, add in the ginger, garlic paste , followed by the onion paste.
Stir until raw taste is no more. Turmeric powder is added in.
Then add the chicken and stir until water comes out, add 1 cup of extra
Once chicken is cooked , add in the dry spice mixture and stir until well blended in.
Once oil floats, ready to serve with coriander garnish.
