Very cool! This is called an aerodynamic contrail. When the air flows over the top of the wing, it is accelerated and the pressure drops. The drop in air pressure causes the moisture in the atmosphere to come out of suspension, making it visible. At these altitudes (where the air temperature is typically around -55°C) the moisture instantly freezes into ice crystals. These ice crystals refract the light and appear as a rainbow to the observer.

condensation of water vapor due to accelerated flow thus a drop in pressure. in this case I think it's forming ice crystals. depends on the altitude
