If you’ve ever been to Japan and had a tuna mayo onigiri at the convenience store, you may be wondering why your homemade version just isn’t as good. My first guess is that you’re using the wrong mayonnaise. But just because you used Japanese mayo doesn’t mean you’re going to get that convenience store taste.

The missing key is “Kakushi aji”, or hidden taste. This is a concept that the Japanese love to use in their foods to add a slightly different flavor dimension to their foods without completely changing the flavor of the dish. Watch the full video to learn all about making this delicious snack!

I squeeze my rice like it owes me money, broke my sister's heart and poisoned my dog.

I tried Kewpie mayo for the first time a couple weeks ago LOVE IT!! I switched out regular mayo for it now and its great, even using it on steamed veggies in the bentos I make. I will be making this tuna mayo onigiri soon since I have canned tuna I need to use <3

Very interesting, thanks for the informative video! Strangely, of all the food I've had on my trips to Japan, I miss convenient store onigiri the most...can't wait to try your recipe.

CHOCOLATE?! I had Japanese curry years ago and absolutely loved it. I could eat it for the rest of my life. That was at Disney world believe it or not and no where since then have I been able to find that perfect curry again. I've tried the roux's and always found them lacking "something" I assumed it was the Japanese sweet potato but now I know. It must be the chocolate. I could literally cry.

Watched the video yesterday. Made the tuna mayo onigiri today. My 10 y/o son loves it! According to him, it's the number one onigiri for him. Thank you sir! I hope you can also share your salmon onigiri recipe soon. Will also try the chijimi recipe tonight. Wish me luck!💙

Thank you for another great video! I have been making these for awhile but wondered why the taste wasnt the same! maybe one could add a tiny bit of sugar if they like the sweeter version. but what a great idea...the Ketchup and MSG mayo must be why it wasnt quite the same?! LOL. I use ketchup and Mayo for dipping french fries or just mayo with a little cajun spice seasoning is great with sweet potato french fries! I also have added shitake mushroom powder to up Umami in my hubs vegetarian Onigiri. I keep a jar of powdered dashi and shitaki for adding that little extra to foods. I always get great ideas to enhance my recipes. Love you both! Be well.
