You could try setting up PyPilot using parts from your old tiller pilots. I haven't tried it myself but I've heard good things. It could be a good and cheap backup autopilot.

I've built and currently testing my own auto tiller for my 23ft sailboat in Scotland using a linear actuator not dissimilar to the one you are using and Arduino to run the control code,
a 3 - pitch digital compass I.C and H-bridge to drive the motor. Don't understand why there aren't more on the market given the extortionate prices and the high failure rate of the current commercial products . Good luck with yours and more importantly, have a safe trip.
