I'm just here from Koefficient's and IronMouse's horrified reactions over Gordon Ramsay's pegao--and I must say, this is not only a perfect demonstration of proper pegao (unlike Ramsay's), but also a great channel I'm glad to have found. Wonderful singing as well, don Carlos!

I just recently tasted this. It was delicious. The perfect snack to hold me over on my commute home from work. It also won't leave lint in my pockets, food being so expensive and all. I had to find out how to make it. Thank you Carlos.

In Iran we call this Tahdig, and eat it with every rice dish we make, and we have different versions too, it’s either only rice like this one, or we also add slices of potatoes, or flat bread. We also make Tahdig with spaghetti, and it’s heaven, even my Italian husband approves😍

Us chinese have something similar, we use a claypot with vegetable oil, rice, chicken, chinese sausage, soy sauce and chinese cooking wine and cook it over a charcoal stove. then serve up the stuff in one plate and scrape the crunchy rice from the bottom of the pot that has soaked up all the meat juices into another plate.

Hi Carlos earlier today I came across your video talking about the loss of your wife. Am sorry for your loss after being married to her for so many years. She was a beautiful lady. It is said that time heals all things, and I can see that you are doing so much better and moving on with your life in a positive way, especially with your grand children and the rest of your family. You do have a beautiful singing voice and hope you will make more singing videos for us. I also subscribed to your channel a while ago. OH MY GOODNESS !!!! Pegao- one of my childhood favorites. I love it as white rice, Spanish rice, black rice, arroz con gandules, yellow rice- all different rice dishes BUT the pegao part is my favorite. I remember my abuela giving it to me in a small plate and I would add ketchup to the white rice pegao con oh so good. All the other pegaos I did not add anything to them, just enjoyed the flavors as is.

I love pegao with a little mayo and Tajin on top. My niece’s Barbadian in-laws make a similar dish but eat it with fresh lime juice squeezed on it.

I used to love eating the crunchy stuff on the bottom when mom made chicken and rice or Spanish rice. They always thought I was weird scraping the pan with a spatula lol

I was wondering why he didnt wash the rice. Maybe that was on purpose? So the oil sticks better to the rice because you don't want your rice to be wet when you mix it in the oil?

BUT I am thinking if I wash the rice the night before and let it dry back out...if that would be better?

I know left over rice can be used too, maybe thats why? Because the rice has already been washed, dried, and the bottom crisps up better?
