How soon do you give them food and water once they come out of their shell?

I'm going to try hatching them out in a vivarium, the one my egg eating snake will be occupying once they're big enough for another enclosure. I have an adjustable heat lamp (on both a rheostat and a thermostat), heat mat, multiple thermometers and hygrometers- I will just have to keep checking the conditions to keep them stable and manually turn them. I'm only trying to hatch out 2 or 3 eggs so hopefully it will be manageable. Can you influence the likelihood of getting males r females by adjusting conditions as with some mammals?
