Boursin Chicken Pasta

Seasoning Mix:
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp Italian seasoning
1 tbsp paprika
1 tsp black pepper
¼ tsp chili flakes
2 tsp salt (or to taste)

Chicken:
3 tbsp oil (from sundried tomatoes jar)
3 chicken breasts, cubed
½ of the pre-made seasoning mix

Pasta and Cream Sauce:
Cooked Pasta of choice, 400 grams (cooked according to package directions)
3 minced garlic cloves
1/3 cup sundried tomatoes, diced
2 cups heavy cream
1 package Boursin cheese
3/4 cup fresh Parmesan, grated
1 cup baby spinach, chopped (I used some basil as I didn’t have spinach)

Mix seasonings in a small bowl. Pre-heat a large skillet to medium high heat with the sundried tomato oil. Add chicken and half of the seasoning mix. Sauté until chicken is seared and cooked through. Remove the chicken on to a clean plate.

Prepare a pot of water with salt to cook pasta according to package directions while making the cream sauce.

With the leftover oil in the pan, sauté garlic and sundried tomatoes for a minute until fragrant. Pour heavy cream. Then add Boursin cheese, breaking it down to melt through. Then add parmesan cheese.

Add spinach (didn’t have any for this video so I subbed basil instead, you can do either or, or both!). Pour the other half of the seasoning mix and whisk through the cream sauce. Taste and adjust for salt.

Add the cooked chicken and its juices into the pan and mix. Add the cooked pasta to the pan and mix through. Use a bit of pasta water if you need to thin out the sauce.
