Hey Mav, Love your vids. Please be careful with those high carbon Japanese knives in the cold and slapping them down on your cutting board. The steel becomes very brittle at low temperatures, and never use them to cut frozen foods either. Take it from someone who has worked as a line cook for over 3 years and has cracked off a chuck of a 300$ knife.

I love all your videos I lived and worked in Erie, PA right on Lake Erie for 25 years. I always thought people out on the frozen lake fishing in the brutal winters we're crazy. My thoughts were always, the ice could give and they would fall through, never to be seen again. I understand it much better these days thanks to your videos.
