Good quality Balsamic vinegar is utterly delicious to add sweet sharpness. Think of adding lemon but a lot sweeter (tastes nothing like lemon!). Try pomegranate molasses if you like sharpness.

So I have seen this a lot and granted I haven't tried this but everyone seems to try with the worst shit kind of balsamic vinegar. The type where there is more than one ingredient (the good shit should just say aged balsamic vinegar instead of vinegar and cooked grape must). So yeah I think you should try with more than 2 year aged vinegar.
