Wow... 新會... My family 家鄉. We left 80 years ago during WWII. Coincidentally my wife is from here as well all her relatives have jars and jars of 陳皮 aging in their cupboards.

Ponkan peels. These trees are popular in the Far east as well as Brazil. Missionaries brought the seeds to Florida in the 1880s. I have 3 of these trees in my yard.

Chen pi also fits so good to 老白茶 (aged whote tea) the herbal sweet ess of the tea with the tang of the chen pi is so awesome

raw puer and ripe puer, not "cooked" puer. it hasn't been cooked. it's just a faster way to fermentation to imitate raw puer's tastes. it's great for applications like making "Ganpu", and for general yumcha with oily dimsum.

personally, i still prefer tieguanyin or aged liuan.
