I was nearly 60 before I realized that ganache was not a Hindu deity -- all those wasted years! Thanks for suggesting coconut milk as an alternative to cream. I just tried it in the thick, sugar-free ganache that I eat as fudge. (I'm diabetic) So silky smooth and delicious.

I'm making these up as truffles for my daughter for Christmas. Only I'm making a variation on the theme. I'm using dehydrated heavy cream powder and rehydrating it with hot coffee. Then I am mixing it with her favorite white chocolate. I think she will LOVE it....

Later: I used half hot coffee cream and half white chocolate like instructed, but it looks pretty thin. I'm going to refrigerate it and see if it gets thick enough to make balls. If it doesn't, I'll reheat it later and add more white chocolate.
