All my Baofeng are the most sensitives of all. My first one was the thiny UV-3R it is (was) just amasing !
The Radtel 860 is very good, but my RT 890 is deaf as a brick, but I love the radio anyway... Waiting for my
RT 900 to arrive ... I suspect my Quansheng UV-5R Plus to be a fals flag Baofeng beeing so sensitive.
The Quansheng's UV-K 5 & 6 are the best value because the custom firmwares I think.

The lady on Air traffic control sounds just like the one i hear broadcasting from East Midlands Airport!
Is that what you were receiving?
And yes, the Baofeng does not seem to have AM as smooth as the Quansheng.
Also i think my Quansheng AM got a little better after the Egzumer firmware.

How far away is the activity you're hearing? About how far is the nearest airport?

I'm very close to Leeds Bradford Airport. I've just been listening to my Uniden UBC75XLT and Quansheng UV-K6 (flashed with Egzumer 0.22) side by side. The Quansheng receives everything from the control tower that the Uniden does - only a mere hint of distortion and a fractionally weaker signal. Reception from the aircraft isn't usually an issue as I usually have line of sight. I honestly could not say if the Quansheng has true AM or a bodged FM but it works well - for the money. Why can't their friends at Baofeng do likewise?
