Hi there, I saw your vid. I've been truck camping since the mid 80's. Here's what I've learned & I'll pass them on to you.
Some of this you may already have, do, or know about.

1) Get stuff you need at a camping store for backpacking. It's small, compact, & light weight.

2)Get splash guards for your truck. It'll help keep you & your rig clean. They work. I know.

3) When parking for the night, park headlong into the wind. That way if a storm comes you won't have to worry about a side wind ripping off your camper shell. Plus, if anything comes bouncing towards the truck, since you have a slimmer profile, it might miss you. If it does hit, the front of the truck is reinforced. Also when cooking you're in the lee & the wind will blow the smoke & odors out of your rig.

4) Use bug spray on the interior doors & windows/ screens openings to help keep bugs out. Use wasp & hornet spray around & on your tires to help keep critters out. Basically, all points of contact on the ground.

5) An inch is a lot of room. Learn how to stack & get used to sand & dirt. Use floor mats to put your shoes on too

6)Air out your sleeping area every morning or often. In an enclosed space the air gets stale.

7)Use a small fan to circulate the air in your sleeping area. This will help prevent hot & cold spots from forming & help prevent condensation & mold & mildew from forming.

8)Use a solid hooded sweatshirt. Draw the hood tight when you sleep to help encapsulate body heat. It can double as a pillow/ dirty clothes holder/ gear carrier etc.

Good job! I strongly recommend adding a screen or grate to the end of the pvc drain to keep mice and other crawly critters out.

You can switch the hinges on the fridge door so it opens up the other way. Might be just me, but I'd get annoyed having to reach around the door to grab stuff. Great build. I like that you have large things. I.E sink, fridge, faucet you can actually fit stuff under to clean things, bed. Liked and subbed.

Seriously,
When you get back Consider swapping the fridge door hinges to make it open to the left.
Formica on the counter top will be more durable & food safe than any stain or paint. They come in wood grain so you'd never know unless you were the one to install it.

Congratulation for so nice project. Evaluate if you can change the fridge hinges for the door opening to the left, you should get more space.

Couple ideas for you and some praise. Possibly add a t-junction for the water jugs with a quick disconnect at some place so you can fill water jugs and run off remote water at the same time without having to remove maybe. Again great attention to detail very well thought out and good use of scrap wood and new wood build and my inspiration for mine absolutely love your carpentry skills aslo now looking at aluminum myself now. Solar side get a secondary set up that you can move around and can assist and you can put away easily, trust me one panel is not enough sometimes. Build a cover for the sink out of wood as a cutting board/cover maybe for catch and cook.

When it comes to gray water drainage; If you route your piping in front of the rear axle instead of behind it, there is already a tank there in most cases. Tapping into it can save you a lot of work. The more you know! 🌈⭐

If a hole gets stripped use a small piece of wood to stuff in the hole then run the screw, it will hold tight! Also definitely stain the top and paint the bottom! BTW the shadows of the tree on the truck make it look like a badass camo paint job!

You can always carry one of the three gal and stick under your truck to drain in if you have to have a tank

If your screws are stripping out the heads, you are probably using the wrong size/type of bit. I used to hate Phillips head as well. But size the bit right and they are not too bad. Also there is another bit that looks like a Phillips head but has some small little peaks between the blades, I forget the name, but they look descriptively like a Phillips but are not and will also strip if the wrong bit is used. Welcome to Springfield. Native resident here. And I absolutely love your vid.

I think the drain hose is fine, but I'd install mud flaps behind rear tires. I see that hose as a very inviting home for dirt daubers.

Not to discredit - you're doing it man, good job - but if it were me, I would forgo cabinet doors altogether and "skirt" the under-cabinet with a rod/rail and some fabric, like tea towels. But I understand that's not everyone's aesthetic lol
