Cauldrons also don't block light, so if you integrate them into your build somewhere you can frequently get some hidden lighting with them as well.

i can think of a couple features that could be added to cauldrons that could make them even cooler
1 able to fill them with milk or lava
2 able to do some kinds of brewing in them if you put a fire under them (like maybe using it to make kinds of soup)

might be a good basis for a mod if i knew how

You forgot how cool they're in mc:pe.
If you want to dye your leather armor, fill a cauldron with water.
Tap on in with a dye, the water will be the color of your dye and you just only need to klick on it with your armor and it's dyed!

I think the reason they don't get much love is because you can do everything you could want in normal cases with just one of them. Other utility blocks such as furnaces, chests, and brewing stands give you increased production when you have more, but unless you're mass-cleaning banners, you don't have much reason to have more than one of them.

A really good use of cauldrons is as a rain stopper. So what you want to do is place a cauldron, then place redstone coming out of it, then leading into a repeater, after that place redstone leading into a command block. Make that command block redstone powered and make the command toggledownfall. So basically once it is raining the cauldron fills causing a red stone output powering a rain stopping command block. This is really useful if you hate rain.
