Colossal dogs grilled up, bacon bits, beer cheese on beer cheese. Just like grandma use to make!
Beer cheese: make a roux with 2 tbsp of bacon lard and t tbsp of flour. Mix in 1 cup of milk and 1 cup of beer. Simmer and mix until smooth. Slowly mix in 1.5 cup of cheddar cheese. Cook until reduced and thick. Add seasoning to taste (salt, pepper, garlic, onion, mustard, paprika, chili powder).
